Just Spread Preserve Cookie roll-Ups

Simply delicious- these fruity sweet sugar cookie and Just Spread preserve roll-ups are a perfect grab-and-go treat. So easy to make from scratch! This recipe is sure to delight.


Ingredients:

  • 2/3 Cup Just Spread Preserves- We used 4-Fruit (Use your favorite!)

  • 3 Cups Flour

  • 1/2 Teaspoons Baking Powder

  • 1/2 Teaspoon Salt

  • 1 Cup Butter

  • 1 Cup Sugar

  • 1 Large Egg

Process- Part 2:

  1. Mix together dry ingredients in a large mixing bowl- flour, baking powder, and salt

  2. In a separate bowl, mix the butter and sugar until combined; then, add egg and mix until creamy.

  3. Combine the mixtures into the large dry ingredient mixing bowl and combine until butter is not visible.

  4. Split the dough in half and wrap in plastic wrap to cool for about a hour in the fridge.

Process- Part 2:

  1. After cooling, roll the dough out onto a floured wax paper sheet that is about 13 inches long. The dough should be about 10 x 12 inches and flat. You can cut off some crumbly edges if needed.

  2. Smother the Just Spread Preserve goodness on top of the dough creating a layer of fruity sweetness.

  3. Using the wax paper to assist you, roll up the dough into a log shape.

  4. Chill again in fridge for 30 minutes before baking. Or, if you don't want to bake yet, you can store the roll in the freezer for up to a month!

Process- Part 3:

  1. Once you are ready to bake, pre-heat the oven to 350 degrees.

  2. Take the roll-up out of the fridge and begin cutting it into 1/2 to 1/4 inch thick cookies (depending on how crumbly your dough is).

  3. Place the cookies on a cookie sheet covered in parchment paper and bake for 12-18 minutes (Until cookie will no longer come apart and edges are done).

  4. Take out and let cool on a cookie rack and enjoy!
